This recipe was shared with Michelle by one of her co-workers.  Although it looks like a moose puked your dinner into your bowl for you, we love this belly-warming and hearty soup.  In fact, Heidi loves it so much, she requested it for her birthday dinner when she turned 6!  It’s easily doubled and freezes well.

Ingredients:

2 onions chopped (yellow or white, or a combination)
2 cloves garlic, minced
1 lb ground pork
1 lb ground beef
2 litres of beef broth
1 small to medium-sized jar of sauerkraut, drained
1 small can of tomato paste, unseasoned
3 pickles, diced small
Small tub of sour cream
Caraway seed, optional

Method:

Sautee onions, garlic, and meat until the meats are browned.  Drain fat.  Or don’t 🙂 Add tomato paste and saute a minute further.  Add drained sauerkraut and the remainder of the ingredients with the exception of the sour cream. Let the mixture heat through.  Turn off the mixture once it starts to simmer and add sour cream.

The recipe we were given says to top each bowl with a dollop of the following mixture: salt, pepper, two tablespoons of Dijon mustard, and 1 cup of miracle whip.  We don’t do this, but I’m sure there’s someone reading this who would like to so we’ve made sure to include it.
